High-quality black truffles cultivated in Spain! The black truffle is a hypogeous fungus, which means it grows and develops underground. Scientifically known as Tuber melanosporum, its discovery dates back thousands of years. In fact, it was consumed by ancient Egyptians, Romans, and Greeks, who attributed medicinal and aphrodisiac properties to it. Black truffles are easy to distinguish by their peculiar appearance; when ripe, they are black, as their name suggests, with a violet hue. Their texture is warty, and inside, the flesh is compact yet light, with a certain firmness.

WINEMAKING Once at the winery it goes to the press straightaway and is fermented in French-oak barrels. Racked and aged for 7 months in the same barrel with weekly batonnage. TASTING NOTES Clean, bright almost transparent colour. The nose displays linden blossom, wooden notes and grapefruit aromas.
